Healthy Meal: Curried Butternut Squash Soup and Waldorf Salad with Epic Dressing

Today’s lunch is really combining two favorites. I love butternut squash soup because it’s so healthy, but thought I would try a different recipe to mix it up. My old recipe for butternut squash soup has an apple thrown in, so I thought maybe I’d combine it with a favorite Waldorf salad of mine that has apples in it…

Um, so I totally just went to go find the link to the last time I posted butternut squash soup, and realized I had eaten it with this salad! Wow, am I predictable or what. This time I used grapes instead of cherries, so I’ll still post a bit about that…



Yeah, I kind of gobbled down the delicious soup before I took the picture… still, I think you know what butternut squash soup looks like. It looks basically the same as the last time I posted a recipe for butternut squash soup.

Notes for the soup:
When it was cooking, the curry was SO strong! I used 1 tbsp of curry powder, rather than 1 tbsp plus 2 tsp, but it honestly made my whole apartment smell like curry (my roommates were less than thrilled). However, it tasted great, and the curry flavor wasn’t too strong at all. I cut the honey in half and it was still plenty sweet, and I didn’t put any yogurt garnish on the top. I did sprinkle some cinnamon on though – I think the combination of cinnamon and butternut squash is really delicious. Plus, cinnamon in my recipes makes me trendy and cool.

Notes for the salad:
Um, grapes are EXPENSIVE this time of year! Of course, right after I ran to the store to buy them (and then cringed after it rang up $12 for a bunch of celery and the bag of grapes), my roommate said she had a ton of cherries going bad, and asked if I could help eat them. If she had caught me 10 minutes sooner I would have been all set, as cherries are great substitutes for grapes in this (I’ve done it that way before, as evidenced by the last time I made squash soup with this salad). Anyway, as with any salad, feel free to add what you want and subtract what you don’t. Today I also skipped the walnuts, though I usually do put them on. I really wanted today’s lunch to be as light as possible, and as good as nuts are for you, they also have a lot of calories.

119 calories for the soup (recipe here)
185 calories for the salad with my chosen ingredients of celery, grapes, apples, and no walnuts. That’s 131 calories less than last time I made it! See, it’s easy to save calories if you really want to.

Again, this combination of squash soup and Waldorf salad just goes so well together, and is so filling. I can’t decide whether I like this curried squash soup better than the other sweeter recipe. Both are good, and they’re very similar, so whatever you feel like 🙂

  1. Grapes are seriously so crazy right now. I wasn’t paying attention (I never do- so bad) and ended spending like $9.00 on grapes. What the heck? I spent over $40 at the grower’s direct (it’s like a fruit/veggie only store). That’s alot for a single girl to spend on veggies for the week. I think. Isn’t it?

  2. Hmm, I don’t know. I probably spend like $20/week on produce, but fruits/veggies are the main things I buy to cook with, so my food spending is probably just double that. But produce is usually cheap, so I guess when you look at it that way, $40 is a lot. doesn’t mean I’m going to stop buying on a whim anytime soon though! 🙂 At least I try to balance it out by sometimes buying things on sale that look good and then coming up with recipes for them.
