Healthy Carb-Loading Meal: Nicoise-Inspired Salad

Tomorrow, I’m going to be hiking my very first 14er (mountain with a summit that is 14,000 feet or higher). But when my friend Mike and I went hiking yesterday on a much smaller peak for about 90 minutes, I was completely wiped out. Hiking can be pretty intense! When Mike mentioned that it would probably be about a four hour hike to the top on Saturday, I realized it would probably be just about as strenuous as a full marathon. Time to {Read More}

My New Favorite Kitchen Tool: The Vegetti

My friend Becki did a great recipe post this week, and talked about using a Vegetti to spiralize her veggies into pasta. I had heard of a spiralizer before, but it seemed expensive/difficult/complicated. However, when Becki made it look so easy, and pointed out that the Vegetti is cheaper than a regular spiralizer, I popped over to Amazon and bought myself one… for just $13. Hooray for Amazon Prime, because today at lunchtime, it was on my doorstep! As you may {Read More}

Healthy Meal: Zucchini Cheddar Soup

One thing I love about working from home is the ability to eat healthy for lunch. When I work in New York City, I can certainly bring lunch from home, which is healthier than getting takeout. But when I’m working in my own apartment, I can cook up whatever my little heart desires. Today’s menu? Zucchini soup. I got this recipe by Googling around for something to do with zucchini, since I have a ton of it in my fridge. {Read More}

How do you like them apples?

Recently, I’ve discovered my love for apples. Seriously, they are phenomenal. Whenever I get a craving for something sweet, I normally go for a spoonful or two of ice cream direct from the carton (hey, it’s my carton of ice cream and no one else eats it!). But recently, instead of going for the ice cream, I find that apples satisfy my craving and sate my hunger without giving me too many calories. My roommate went apple picking this past {Read More}

Trying some new things

To mark the start of the holiday weekend,I met up with some girlfriends at The Redhead for dinner, and then moved on to The Belgian Room for craft beer. Yum! Knowing that we were going to be getting free frites at The Belgian Room, I tried to go light on my entree at The Redhead, opting for the appetizer-size portion of shrimp and grits while all my girlfriends had the fried chicken platter (their specialty, and supposedly the best fried {Read More}

An Ode to the Street Carts

Like many New Yorkers, I often buy my weekday morning breakfast on the street. Unlike many New Yorkers (ahem, Boyfriend, this means you!), I don’t go for the donuts, croissants, muffins, or other bad-for-me treats. Instead, I pass that cart and go to the cart next to him: the fruit vendor. For 50 cents, I can get basically any hand fruit that exists. Some mornings I want an apple, others a nectarine… etc. I won’t kid myself into thinking it’s {Read More}

Healthy Meal: Raw Vegan Pizza

I haven’t really been posting my raw vegan recipes becaues they’re not really cooking, and so many people thought it was gross when I had that kale smoothie that I didn’t know what a receptive audience I’d have. I think this is one of my favorite raw vegan recipes I’ve tried so far – pizza! I made two of these and when I ate the first one and saw how amazing it was, I took a picture of the second {Read More}

What’s In Your Crisper?

Kim posted about the produce in her rotation, which I thought was a neat idea. I think any time you stop and take a closer look at what you’re doing, you’re bound to find a few problem areas to work on, and of course, some good things to keep doing. (Then again, I’m a consultant, so of course I think intense analysis will solve anything). I suppose you can kind of tell what kind of produce I eat based on {Read More}

Fruit – Good or Bad?

Lance wrote a great column yesterday on Top 10 Better Health Resolutions. I am very pleased to say that I looked at the list and I am already very good about almost everything on it! I drink a ton of water (today it was 18 glasses, but that’s overkill; usually I’m more around 10-12) I lift weights/do resistance training daily. I’m working on increasing the amount of weight I lift and decreasing the reps, because I think that’s why I {Read More}

A is for Apple

Lately I’ve been snacking on apples a lot. There is a farmer’s market down in the square below my building (though Friday is their last day of the season! No fair), so I stop every few days and pick up a bunch of yummy orchard apples to keep at my desk. I usually eat one every morning around 10 or so as a mid-morning snack to get me through to lunch. I also happened to use an apple last night {Read More}
