Award-Winning Recipe: Bacon-Turkey-Tequila Chili

Award-Winning_Bacon_Turkey_Tequila_Chili

Last night, a hiking Meetup group I’m in organized a chili cookoff. While most people simply wanted to eat chili and contribute an appetizer/drink, I was one of about a dozen people who signed up to cook chili and be in the competition. Chili has always been one of my favorite dishes to make – it’s quick and easy, comes out great almost every time (and any mistakes can easily be covered up with sour cream or cheese), and it was the first thing I ever learned to cook, back in college. In the last ten years (also: I cannot believe I’m …

Healthy Recipe: Turkey Shepherd’s Pie

St. Patrick's Day House Party

Remember how one of my New Year’s resolutions was to have people over at my home at least once a week? I’m not doing well with my other resolutions but that one is going strong. One of my biggest reasons for wanting to host people so often was that I hoped it would make me less uptight and more go-with-the-flow, rather than stressing out about every little detail. Girls’ Night In / Healthy Meal: One-Pot Chicken Taco Casserole

Taco Casserole and Salad

Last night, I hosted a bunch of my girlfriends over at my place to watch The Bachelor: Prince Farming. I got really into the Bachelor when I was down in Dallas, in part because I had a fabulous group of girlfriends with whom I watched the show most weeks. Now that I’m in Denver, I decided to try to replicate that here! Hosting a watch party also coincided nicely with one of my new year’s resolutions, which was to host events at my home more frequently. (Again, more to come on my new year’s resolutions later… I’m still trying to …

Healthy Indian Platter

Today was a pretty exciting day to be a Coloradan! In previous years, Election Day has never really been a big deal to me, since it’s always pretty clear which way the New York votes were going to go. But a lot of the races in Colorado today were pretty hotly contested, and could make a big difference at the national level in determining the swing of the House and Senate. I was in a training session today and so was able to get out of work early at 6pm, at which point I hightailed it out of Denver and …
