Healthy Meal: New England Veggie Clam Chowder

Despite it being almost April, this afternoon I felt a bit of a chill in the air due to some impending rain – and I found myself desperately craving clam chowder. Clam chowder is usually a pretty unhealthy dish, thanks to the potatoes and heavy cream, but I have a ton of Chobani Greek yogurt in the fridge – surely that could be used to thicken it? I drew inspiration from about a dozen online recipes (most notably Rocco DiSpirrito’s and {Read More}

Healthy Meal: Homemade Veggie Ramen Noodle Soup

This morning, our Athleta running group was teed up for our first double digit run: 10 miles! The More Half Marathon is just 3 weeks away, and everyone is doing an awesome job with the training plan. Only two long runs left! Last night I went to Katie’s housewarming party and had a great time, but still made it to bed 11:30pm. 8.5 hours of sleep = bliss! Laura stayed at my apartment so that she’d be closer to the {Read More}

Healthy Meal: West Indies Pepper Pot Soup

This soup has been in my arsenal of recipes to try for a few days – it’s extremely different than anything I’ve made before, and included a vegetable I’ve never cooked with. I’ve had taro root bubble tea, but never tried it in cooking, and I decided I was game for the adventure. When I went to the grocery to buy the taro, it rang up as “malanga,” which I tried to tell the cashier wasn’t the right thing. He {Read More}

Healthy Meal: Gumbo Z’Herbes with Red Beans

I knew I wanted soup for lunch. I also knew I wanted to use up the rest of the collard greens in my fridge. Searching on Food Network, I found a yummy-sounding recipe from Gourmet Magazine for Gumbo Z’Herbes with Red Beans. I had no interest in making 10-12 servings of this, so I used the recipe just as a guide for flavors while I made up my own proportions. My directions went as follows: Boil about 4 cups of {Read More}

Healthy Meal: Portuguese Sausage and Greens Soup

For this weight loss challenge to work, I can’t just exercise; I need to make sure I’m eating healthy as well or all those hours spent in the gym will be for naught. I’m trying to stick to a mostly low-carb diet (I’m still eating plenty of fruits and veggies, but avoiding potatoes, grains, etc). For lunch, I pulled up my Food Network Recipe Box and found a soup recipe I had saved in November 2007 (yeah, I’m about as {Read More}

Healthy Meal: "Cream" of Roasted Red Bell Pepper Soup

Our grocery store has had red bell peppers on sale for a week or two now, piles and piles of beautiful red shiny skins. I’ve been looking for recipes to use them up (not that that’s a huge problem – I love red peppers and used to eat them constantly as a childhood snack). In any case, I found a yummy sounding recipe for roasted red pepper soup, and decided to customize it and give it a go. The original {Read More}

Healthy Meal: "Cream" of Spinach Soup

One of the nice things about being on a travel project is that I don’t need to go into the office on Fridays. No one else on my team is based in New York, so we’re all conversing via IM, e-mail, and phone anyway. Plus, we always have tons of “extracurricular” office activities on Fridays (training, philanthropy, recruiting, eminence, etc), so we typically put in long hours at the client from Monday through Thursday, then a few hours on Friday, {Read More}

Healthy Meal: Spicy Shrimp and Bok Choy Noodle Bowl

I’ve made this recipe before and actually loved it, but now that I’ve discovered shiritaki noodles I thought I could cut some calories and make it even healthier. However, Daily Plate was having some problems when I tried to put this in, and it originally told me the recipe was 39 calories. I got ridiculously excited, and was disappointed when I came to my senses and realized that wasn’t possible. The server issues went away, and now it’s showing a {Read More}

Healthy Meal: Miso Soup with Shiritaki Noodles and Daikon

As I mentioned in my earlier post, I found shirataki noodles at the grocery last night, and I was really excited! I had also found some daikon a week or so ago, so I had been planning on making an Asian soup with it (I usually can’t find daikon, and substitute parsnips, which aren’t quite the same). I figured having both of those ingredients meant it was the perfect time to make this soup. I didn’t follow a recipe – {Read More}

Healthy Meal: Minestra

Yesterday we had our quarterly staff meeting. QSM involves sitting around at meetings, eating tons of delicious but unhealthy food. It always culminates in cocktail hour starting at 4 PM, and then company-sponsored after-parties where you can basically keep eating hors d’oeuvres and drinking until 4 AM. Unfortunately, I did just that… and managed to eat more than 4,000 calories! Unbelievable. Everything was really high-cal (cookies, brownies, various fried hors d’oeuvres, etc), but I still can’t believe how much I {Read More}
