Checking In On My 2015 “Engage” Goals

Now that we’re about a month into 2015, it’s probably a good point for me to check in on my 2015 resolutions to engage. How am I doing so far? My first goal was to engage in learning – and I’ve pretty much been nailing my goal to “listen to a TED talk once per day.” To prove it, here’s my Excel log of the TED talks I’ve watched so far – there have only been one or two days {Read More}

My New Favorite Kitchen Tool: The Vegetti

My friend Becki did a great recipe post this week, and talked about using a Vegetti to spiralize her veggies into pasta. I had heard of a spiralizer before, but it seemed expensive/difficult/complicated. However, when Becki made it look so easy, and pointed out that the Vegetti is cheaper than a regular spiralizer, I popped over to Amazon and bought myself one… for just $13. Hooray for Amazon Prime, because today at lunchtime, it was on my doorstep! As you may {Read More}

Healthy Meal: Pineapple Fried “Rice” (Quinoa)

One of my favorite things about moving to Denver is my new commute from Dallas. When I used to fly to New York City on Thursday nights, I would have a 3.5 hour flight that would usually land around 11pm or midnight… meaning I would probably start falling asleep for the last hour of the flight, and then I’d get home and immediately crawl into bed. But now that I’m living in Denver, it’s a much shorter flight, and I’m {Read More}

Healthy Recipe: Goat Cheese, Roasted Butternut Squash, and Port-Soaked Cranberries

As I mentioned yesterday in my Thanksgiving post, I mostly kept my Thanksgiving menu pretty traditional and served all the same dishes as last year… except one. While I usually serve butternut squash soup as an appetizer to start the meal, soup is really just too filling to kick off a Thanksgiving dinner. Plus, I’d rather serve something that guests can munch on while chatting, rather than having to be seated with utensils in hand. Fortunately, my mom shared with {Read More}

Healthy Meal: Spinach Dal

This week, I’m working from home – which has changed a lot about my lifestyle. Relevant to this story, it’s that I’m working independently and have access to a kitchen – which means I can eat lunch whenever I want to (instead of when my coworkers get hungry), and I can cook lunch in the kitchen. Bliss! Today I was craving Indian for lunch. I keep a few Tasty Bite meals on hand at all times (usually for Thursday nights {Read More}

Healthy Meal: Gumbo Z’Herbes with Red Beans

I knew I wanted soup for lunch. I also knew I wanted to use up the rest of the collard greens in my fridge. Searching on Food Network, I found a yummy-sounding recipe from Gourmet Magazine for Gumbo Z’Herbes with Red Beans. I had no interest in making 10-12 servings of this, so I used the recipe just as a guide for flavors while I made up my own proportions. My directions went as follows: Boil about 4 cups of {Read More}

Healthy Meal: Pumpkin Pasta

With the Atlanta Marathon coming up on Thursday and me still being completely exhausted (though most people dread going to the doctor, I cannot WAIT for my doctor’s appointment next Wednesday to find out all my test results, and am counting down the days), my nutrition leading up to the race is extremely important. I’ve been gaining quite a bit of weight lately, and even if I were feeling in tip top shape, the extra weight would probably slow me {Read More}

Healthy Meal: "Cream" of Roasted Red Bell Pepper Soup

Our grocery store has had red bell peppers on sale for a week or two now, piles and piles of beautiful red shiny skins. I’ve been looking for recipes to use them up (not that that’s a huge problem – I love red peppers and used to eat them constantly as a childhood snack). In any case, I found a yummy sounding recipe for roasted red pepper soup, and decided to customize it and give it a go. The original {Read More}

Healthy Meal: Raw Vegan Pizza

I haven’t really been posting my raw vegan recipes becaues they’re not really cooking, and so many people thought it was gross when I had that kale smoothie that I didn’t know what a receptive audience I’d have. I think this is one of my favorite raw vegan recipes I’ve tried so far – pizza! I made two of these and when I ate the first one and saw how amazing it was, I took a picture of the second {Read More}

Healthy Meal: Frank and Beans

This weekend wasn’t really a good one for me cooking-wise. I was so looking forward to coming back and making yummy food, but I ended up being so busy that I actually didn’t cook almost at all! Thursday night for dinner I made tofu tagine, but I put too much turmeric in and it came out kind of gross looking because it was too yellow, so I didn’t take a picture or post it. Then Friday afternoon I made a {Read More}
