Healthy Meal: Chipotle Cashew Chicken with Brown Rice and Spinach Salad

Last night, my roommate came home right when I was finishing up dinner, so I ended up talking to her instead of posting my recipe. that means today, you get two recipes! (And maybe a few more as well, since I have a couple recipes that I cooked and took pictures of but neglected to post). This recipe springs from me wanting to use up some fridge leftovers. I had chicken (from another recipe, to be posted soon), red peppers (from the same), hazelnuts (from like… 3 months ago), and chipotles in adobo (from whenever I make turkey chili). I …

Healthy Meal: Oven "Fried" Pork Chop and Honey Roasted Sweet Potatoes

It’s rare for me to not think about food for most of the day. I usually am dreaming about what I’m going to have for dinner. However, at 6 PM today, I had forgotten to think about dinner at all, and was browsing Food Network trying to think what I was in the mood for. I was kind of in the mood for fried chicken, but I knew I only had a HUGE breast in the freezer that was really two servings. I know you can’t unfreeze and then refreeze meats, and since I’m traveling till Thursday, the other half …

Healthy Meal: Pork Chop with Mushroom-Onion Pan Gravy

Last night while at the gym, I got a call from a friend that I was to be at her apartment, way up in Morningside Heights, fed, dressed, and ready to go out… all in an hour. It normally takes me that long just to shower, dry my hair, and get dressed, so I needed to make something that would be ridiculously fast, and also ridiculously low calorie because of the drinking I’d be doing later. This recipe fit the bill, and also contained only ingredients that I already had (no time for a grocery run). Recipe notes:I basically followed …

Healthy Meal: Pork Chops with Cran-Apple Sauce, Scallion Potatoes, and Snap Peas

I first made this recipe last summer, and really liked it. When pork chops went on sale at Gristedes, I figured I’d try the recipe again and post it here for you all to enjoy as well 🙂 Recipe notes for the pork chop and sauce:I used a pretty big pork chop (6 oz instead of the standard 4), because I was really hungry. I grilled it on my Foreman instead of pan searing it, which meant no oil was necessary. For the sauce, I used a whole apple, 1/8 cup of dried cranberries, and 1/2 cup of juice, which …

Quick Tagine-Style Chicken with Green Pepper and Tomato Salad

I’ve had this recipe saved for a while, and never gotten around to making it. Today I had some chicken and some cilantro that was going bad, so I thought this would be a good fit. After picking up some prunes, I was good to go.Chicken recipe notes:I used 1/2 tbsp of oil, and 6 oz chicken. I kept the rest of the recipe as-is, just cut down for one serving. Salad recipe notes:You definitely don’t need that much oil for the dressing! For one serving, I used 1/4 tbsp oil, 1/4 tbsp red wine vinegar, and 1/4 tbsp lemon …
